For me, pea soup must have a smoked flavor. This is a classic of the genre - pea soup with smoked meats. It is about this duet that I will tell today, and describe, and show. In my recipe, in addition to fresh meat, there are also sausages and smoked meat. Try it, it is so delicious!
I have one small head of onion, which will go to the broth for meat, well, and the second, rather more so, to fry and already in the soup. The same goes for carrots - smaller into broth, larger into soup.
I never take 200 or 300 grams of meat. Already if you do, so do, therefore I have a whole kilogram. But, if I write that you need only 300, then where to put the rest? Well, you can twist it and make pancakes with meat or, for example, potato zrazy with meat , which you can find on our website.
If you have pork, beef, chicken or vegetable broth, or maybe you want to cook just in the water - go ahead! Pork can be completely ruled out.
Well, if you still decide to do everything according to the recipe, then pour a liter of water into the pan, add pork, one onion (I left home, thin, last layer of skin), peeled carrots (80 grams) and a celery stalk. Bring to a boil, salt and cook over very low heat until cooked. I did in a pressure cooker, cooked in 25 minutes. I do not remove the foam, just after filtering the broth through a sieve or a thick colander.
I had enough for all this amount of ingredients of a liter of water, but if you want less soup, add as much as you need.
So, the meat is cooked, get it, cut the desired amount, and if it is a little, then cut everything. Strain the broth, discard the vegetables - they have already given everything.
Do not coarsely chop the cold smoked pork barrel. Peel and cut onions and carrots.
Heat the pan, add a spoonful of vegetable oil (if your barrel is very oily, then do not need oil) and fry it over medium heat for a couple of minutes.
Next, add onions, fry for another minute and toss the carrots. Continue to fry, stirring, for another minute or two.
Dice two celery stalks. By the way, I replace them with potatoes. This soup is not obtained from the lightest, in the sense that it is not only satisfying and rich, but also quite high-calorie.
Potatoes have never been an “easy” vegetable, which cannot be said for celery. And, if you have already prepared to say that you do not like celery - do not rush, after frying, and then cooking, its taste will calm down. Just try once, because I also haven’t used it once, because I didn’t like the taste and smell. The usefulness of celery made me reconsider tastes and decide to try. For example, I can’t imagine broths without it.
But! If it still doesn’t, then add diced potatoes with all the frying 15 minutes before the end, eliminating or reducing the amount of celery.
My peas are yellow, halves. Sort and rinse thoroughly. In general, it will cook for approximately 30 minutes. If you fill it with boiling water and it will stand while the meat is cooked and frying is done, then the time will decrease to about 15-20 minutes. But here everything is so insignificant that I wash it and leave it to stand, just pouring cold water on it.
Add peas to the strained broth and cook for about 15 minutes. During this time, cut into slices or as you wish hot smoked pork sausages.
I didn’t buy anything on purpose, I just found them in the freezer (then there was a desire to urgently make pea soup). It can be thick sausages, and if suddenly they are not, then you can just take a bigger barrel.
We begin to "collect" our soup. Add the contents of the pan to the peas, chopped smoked sausages, bay leaf and pepper. This time I added a slice of red chili instead of black. But that's what you want.
We continue to cook for another 15 minutes. During this time, my peas became completely soft. Try and adjust the taste as desired.
Peel the garlic and pass it through a press or chop with a knife.
Add garlic and chopped parsley to the pan (I had freshly frozen). Everything, turn off the fire, close the lid and let it brew for about ten minutes, so to speak, intermarry with all the ingredients.
If desired, season with sour cream and serve. Fragrant, satisfying, cozy, the very thing when the hot summer outside the window has already been replaced by cool autumn. Enjoy your meal!
