In the Russian culinary tradition, a hodgepodge can be either a soup or a dish that is prepared from braised cabbage with meat, fish or mushrooms. If we are talking about soup, then originally this dish was called "villager".
At first glance, the hodgepodge may seem like a very expensive dish, because it includes various types of meat products. But, if you think about it, then in reality everything looks a little different. Surely, every housewife after a festive feast remains certain meat products in small quantities. And for a hodgepodge a lot and will not be required - 150-200 gr. favorite meat products are enough to cook soup.
As in any other soup, the broth is the basis of the hodgepodge. After all, no matter how expensive and high-quality the products for the future soup may be, they will not save the matter if the broth is not up to par. Cooking a delicious and rich broth is not such a difficult task. True, it takes time decently, but we are preparing for loved ones and relatives, therefore it is better to forget about the broth cubes. Delicious broth is incredibly good as a separate dish. You can slurp it with a spoon in the bite with homemade pie. That’s the whole lunch.
So, let's start cooking the broth. Put the washed veal in a pot of water, bring to a boil over high heat.
Did the water boil, and did foam appear on its surface? Further events can develop according to two scenarios: the first is to carefully remove the foam, the second is to drain this water, wash the pan and again fill the meat with water. I always drain the water. But you can do as you are used to. The taste of the broth will not suffer from this.
Add the peeled and halved onion and carrots to the pan. We will not forget about bay leaves, peppercorns, cloves, and we will cook on low heat for one hour under a closed lid.
My husband does not like it if cloves suddenly come across in the soup, so I always stick the buds of this spice in the onion, and then throw it away with the onion as unnecessary.
For a more aromatic and saturated broth, celery (root or stems), parsley or parsnip can still be added to it.
Prepare meat products for the soup.
I used ham, brisket and sausages, but you can add to the hodgepodge those meat products and smoked meats that are found upon examination of your refrigerator.
We cut the boiled meat, ham and brisket into cubes, and the sausages into rings.
