To prepare the dough, the butter should be soft, at room temperature. So do not forget to pre-select it from the refrigerator. Personally, I take it out in the evening, and cook it in the morning. It’s quite possible to soften it in a microwave. But here we must be very careful, because the oil should not melt, but only become soft. Something like - 10 seconds, turn off, turn the oil over, another 5-10 seconds and it is soft. But so - in my microwave, and you see for yourself.
Sugar is better to take fine or powdered sugar in general.
I put oatmeal, sugar (70 grams), salt in a blender and chop it all. The blender is grinded, and not like a coffee grinder - into flour. There are small and almonds (but separately from sugar and oatmeal).
Put butter, sugar, salt, flour, oatmeal and ground almonds in a bowl. I have a stationary mixer (very convenient) and it is with it that I mix everything, making small crumbs.
And now add kefir and, again, using a mixer, mix. It turns out already such a heavy big crumb.
If there is no mixer, then this whole thing is frayed by hands (at the end add kefir). But! The longer you come in contact with the oil, the faster it melts and, as a result, the harder the finished base. So do it fast.
Turn on the oven in advance and preheat to 180-200 degrees.
Place the baking dish with oiled baking paper. Set aside 1 \ 4 crumbs - with it we will sprinkle the top, and pour the remaining 2 \ 3 into the mold, level and tamp.
We put the form with the base in a preheated (!) Oven and bake for 15-20 minutes. Meanwhile, we’ll make a curd and cranberry filling.
Cranberry. You can take fresh, frozen, grated with sugar or even jam. In the last two cases, do not add sugar for cranberries.
It is better to drop the frozen one onto a sieve or colander and thaw at least partially, since the ice will melt and drain, and as a result, our dough will not suffer (a large amount of liquid can simply get wet).
So, put the cranberries with sugar (30 grams) in a blender and chop it, literally a couple of seconds, since it’s quite okay if you get a few whole berries.
In addition to cranberries, I did with cranberry jam, which was prepared with pears and apples. If cranberries are sour berries, then cranberries have a characteristic bitterness, which is not bad at all, but this sourness is not enough. Bottom line - if you take something other than cranberries, add a little lemon juice.
Curd is better to take tender, not dry. Otherwise, it is necessary to correct the situation, for example, add a little sour cream - some tablespoon, and mix well, making the cottage cheese more moist.
I have 180 grams of cottage cheese in the ingredients. This figure is because in our stores packs are sold with exactly that weight, or rather, most often. If you have 200 grams - also fine, take it and do not think to remove anything up to one hundred and eighty.
If you do not have a blender, then it is better to grind the cottage cheese through a sieve so that it acquires a characteristic tenderness and smoothness.
Pour the egg into the blender (I have a whole, weighed 67 grams), add the cottage cheese, the remaining 30 grams of sugar and mix everything until smooth.
We spread and level on the baked dough, chopped berries (or jam) go on top and everything ends with the laid-off crumbs.
We base it back into the hot oven and at the same temperature (180-200 degrees) we bake it until ready. It took me another 20 minutes.
Then remove the pan from the oven and let the dough cool. I take hold of the ends of the baking paper and carefully remove everything from the mold, put it on the wire rack and cool it down (it takes longer to cool in the mold).
That's all. By and large, it takes very little time.
What I like about this type of baking: made, cut, and done. You don’t have to cut anything, then collect the rest of the dough, roll it out and cut it again ... Well, you know, in this case you don’t have to bother with this. Anyway, everything will be done for you by a blender, mixer and oven, which is good news!
