I just love the combination of cottage cheese and coffee in pastries and desserts. In addition, this pie also has juicy plums and ground almonds in crumbly dough. On the palate - well, just a cup of cappuccino, seriously! One of the most unusual plum pies that I tried, and I baked a lot of them in my lifetime. I highly recommend making this pie. Fuss with him a little, the products are the simplest and most affordable, and the result is beyond praise - the most delicate cheesecake with a delicate creamy coffee flavor, aroma and slices of juicy fruit.
To prepare the dough, the flour must be mixed with ground almonds, baking powder and a pinch of salt. Add 60 grams of sugar and 125 grams of cold butter, cut into small cubes. Chop everything into crumbs, add 2 eggs and knead the dough.
Roll it thinly on a floured surface and put in a deep baking sheet with a diameter of twenty to forty centimeters. Put the baking tray with the dough in the refrigerator for thirty minutes.
Now prepare the curd filling. To do this, we dissolve the powder for making cappuccino coffee or coffee poppy in four tablespoons of boiling water and cool slightly. Beat 3 eggs with fifty grams of sugar until white. Add cottage cheese, starch and coffee.
Beat cream until soft peaks and mix gently with curd cream. Heat the oven to two hundred degrees. We take out our baking tray with dough from the refrigerator and often prick it with a fork so that when baking the cake does not bend.
We spread the curd filling on top, and on it the halved washed plums with pitted slices down. We bake our cake for forty minutes, cool in shape and cut into pieces. Sprinkle with icing sugar and serve with tea or coffee.
