Dedicated to lovers of baking with citrus aroma - orange shortbread cookies with cranberries. A semi-finished product of such cookies can be prepared in your spare time, then frozen, and baked later when you want fresh pastries for aromatic tea.
First you need to prepare the base of cookies with cranberries - shortbread dough according to the most common classic recipe. Such a dough can often be found in recipes called "1-2-3", that is, for it you need to take 1 part sugar, 2 parts butter and 3 parts flour, and an egg for binding.
Rub the cold butter into crumbs with sugar and flour.
Introduce the egg and orange zest.
Mix everything very quickly, putting it in a ball - so that (if possible) to prevent the oil from melting.
The resulting dough may even seem patchy, it's okay. Wrap the dough in a film, put in the refrigerator for about an hour.
Fresh cranberries are needed for the filling, but frozen cranberries can also be used, but it will need to be completely thawed and all the juice drained, otherwise the filling will turn out to be too liquid.
Now everything is simple at all - you just need to grind cranberries, nuts and sugar together in a blender.
It remains only to "put together" everything together. I advise you to divide the dough into two parts.
Roll out the dough into a rectangle 3-5 mm thick. For convenience, this can be done using cling film (or paper).
Spread the nut and berry filling evenly over the entire surface of the dough.
Wrap the resulting rolls again in cling film and send at least for 4 hours in the freezer.
A raw roll can be stored in the freezer for up to three months. When you decide to bake cookies, you need to get the frozen semi-finished product and let it lie down a little and warm up a bit (so it will be easier to cut), while the oven is warming up to 180 degrees.
Cut the roll into washers about 1 centimeter thick.
Bake for about 10 minutes, the bottom of the cookie should only lightly brown.
Cool the finished cookies on a wire rack.
Cookies with cranberries turn out to be very festive, bright and amazingly tasty!
