And wonderful mutton broths are obtained in a slow cooker. Incredibly rich and fragrant. If I cook the broth in this way, then immediately put the meat and vegetables in the bowl, set the Soup mode to 2 hours.
Put pepper, paprika, coriander into a mortar and crush thoroughly.
Peel and finely chop the onion and garlic. In the second pan (in the first we have the broth cooked), heat the olive oil and fry the onions and garlic.
Peel and grate carrots. Add carrots, spices, tomato sauce to the pan, mix and cook for 5 minutes.
Blanch tomatoes. To do this, make a cross-shaped incision on each bottom, put in a bowl and pour boiling water, after one minute, drain boiling water and pour very cold water. After this procedure, removing the skin is not difficult. Cut the pulp of tomatoes into small pieces and add to the remaining vegetables. Cook for 5 minutes.
Add rice to the pan to vegetables, mix well, cover and leave on fire for 5 minutes. During this time, rice absorbs the aroma of spices.
Place a sieve on the pan and strain the broth through it. Increase the heat, bring to a boil and cook until rice and vegetables are ready, about 10-15 minutes. 2 minutes before the end of cooking, pour in the kharcho tkemali sauce. Salt to taste.
Disassemble the meat from the bones, cut into small pieces and return to the soup.
Serve lamb kharcho sprinkled with chopped cilantro. Those who do not really like its flavor can replace cilantro with parsley.
