For many centuries, potatoes have been widely used in Lithuanian cuisine. Of course, the zeppelin (Didzkukuliai) is considered to be the most famous Lithuanian dish from it. But there are still equally tasty dishes - such as Vedarai (baked gut with grated potatoes), Ploksteinis (potato pudding), Kugelis (potato casserole) or Zemaiti pancakes (Žemaiciu blynai) ...
If you carefully read the method of preparation of all these dishes, you can see that they are united by one thing - they are made from grated potatoes, and it does not matter raw or already cooked.
And now I want to introduce you to another traditional, old Lithuanian grated potato dish - potato dumplings (Вulvių dubenėliai).
2 potatoes previously boiled in their skins. Cool, peel and then crush in mashed potatoes.
Peel the rest of the potatoes, wash them well and grate in any way possible.
Previously, raw potatoes were rubbed manually, and they used the part of the grater where such square holes (specially photographed it) - the potato grated with its help, it turns out as if it were ragged, rather than small chips. Now on sale there are special potato potatoes, which undoubtedly facilitate the rubbing process and save valuable time. As a true Lithuanian mistress, I am the happy owner of such a miracle grater. Therefore, the rubbing process takes me only some 2-3 minutes.
Then put the raw potato mass in cheesecloth and squeeze the excess liquid from it into a separate bowl.
Allow this liquid to settle and drain it, starch will remain at the bottom. It can be washed several times in clean water, each time allowing the starch to settle to the bottom and draining the muddy water.
If there is not much starch left after washing, you will have to add additional dry powder to the dough. Tentatively - its volume should be about 2 tablespoons.
Next, mix together the raw squeezed potato mass, mashed boiled potatoes and clean, settled starch. Salt to taste. If you like, you can add a pinch of ground nutmeg.
From the resulting dough, form small balls (approximately the size of a walnut), make a shallow dent in the middle with a finger dipped in starch - it will turn out smoother and the dough will not stick to the finger.
Bring the water to a boil in a spacious pan, salt it.
Formed dumplings dip in boiling water (required!) And cook until tender, it is about 15 minutes. Get a slotted spoon and serve with your favorite sauce.
For example, we like the sauce of cracklings with fried onions or, you can still, with sour cream and mushroom sauce, which I made.
Cut the mushrooms into small pieces. It is very tasty with champignons, besides they can be bought nowadays without problems at any time of the year.
Note: mushrooms can easily be replaced with dry or frozen. Now I just did with the frozen ones. They had to be unfrozen beforehand, I think it took me somewhere around 250 g + the broth in which they were located.
Well, dry mushrooms will have to be soaked in advance in warm water for 3 hours.
Cut the onion into a rather small dice.
Fry it in hot vegetable oil over medium heat until softened and light golden. Add chopped mushrooms and fry them a couple of minutes with onions.
Then pour a little mushroom broth (after soaking or freezing) and add sour cream, season with spices - salt, pepper and thyme - to taste. Then boil everything to the desired consistency.
If fresh mushrooms were used in the recipe - water, of course, should not be added. Just do not fry too dry, leave a little of the liquid that is released during frying.
By the way, the remaining mushroom broth (after soaking dry mushrooms) can easily be used in another dish. For example, add to soup or another sauce - but what? Do not disappear in vain for such a fragrant supplement!
National Lithuanian dishes are quite nutritious, distinguished by their traditional simplicity and peasant plainness. They are not particularly difficult to prepare and very often include very few components.
Potatoes are often used not only as an integral part of first courses or as a side dish for second courses, but also many independent dishes are prepared - this is a characteristic feature of Lithuania.
