The recipe is very popular, close to the recipe according to GOST, but slightly different.
Marshmallows are tender, airy, moderately sweet.
Apples are preferably sour or sweet and sour.
Agar cannot be replaced with gelatin.
From the specified amount of ingredients, 80–100 pieces are obtained.
Peel the apples.
Cut into small pieces.

Put in a baking dish.

There should be no lumps (you can rub the apples through a sieve).

Bring the agar to a boil.

Add the hot syrup to the applesauce with sugar and protein.
The mass should be dense, airy and should keep its shape well.
Using a pastry syringe, put marshmallows on paper (cutting board, silicone mat, etc.).
